Salmon Steak w/ Miso Marinade

  • salmon 鮭 (さけ) steak, 1.5 lbs
  • 3 tbsp miso 味噌
  • 1 tbsp sugar 佐藤
  • 4 tbsp mirin 味醂

The recipe called for 2 tbsp of mirin and 2 tbsp of sake, but since I don't usually have sake on hand...

Fillets are cuts along the spine of the fish. A steak cut goes through the spine.

Mix the miso, sugar, and mirin to make the marinade. Marinade the fish in the fridge for at least 30 minutes.

Put some parchment paper in the frying pan. Put the fish on it and cook for 7 minutes per side with medium heat, covering the pan. I left most of the marinade on the fish and it seemed to be fine, but in the video I was following, the cook seemed to remove the marinade.
