Oyakodon 親子丼

  • rice
  • 8 oz chicken thigh
  • 1/2 white onion
  • scallions (optional)
  • 4 eggs
  • dashi
  • cane sugar
  • mirin
  • soy sauce
  • green garnish (japanese parsley 三つ葉 or green onions)

Start the rice. Make the dashi if you don't have any.

Chop the onion and scallions. Cut the chicken into thin, diagonal pieces.

When the rice is done, put into low saucepan:

  • 1/2 cup of dashi
  • 1 tbsp cane sugar
  • 1 tbsp mirin
  • 2 tbsp soy sauce

To make one serving:

Add half of onions, scallions, and chicken to the pan. Bring to simmering boil and cook covered for 6 minutes, turning the chicken over once. Then pour egg over in a circular motions to distribute it evenly and cook for another 2 minutes. Put the rice in a bowl and slide the saucepan contents on top. Add the green garnish.
