Southern Cornbread
- 2 cups self-rising cornbread mix
- 2 eggs
- 14 oz buttermilk
- 1/4 cup vegetable oil (or bacon grease)
Preheat oven to 400°F.
Mix the cornbread mix, eggs, and buttermilk with 1/8 cup oil.
Heat cast iron skillet with 1/8 cup of oil. If a drop of batter sizzles
when added, add the rest of the batter and put the skillet in the stove
for 25-30 min.
Self-Rising Cornbread Mix
- 2 cups cornmeal
- 1 cup all-purpose flour
- 2 tbsp sugar
- 2 tsp salt
- 2 tsp baking powder
