Chili

  • 16 oz ground 20% fat beef (for an upgrade, see if you can have some sirloin ground)
  • 1 yellow onion
  • 1 jalepeño pepper
  • 4 cloves of garlic
  • 15 oz can tomato sauce
  • 15 oz can of stewed tomatoes
  • 15 oz can of kidney beans
  • 2 tbsp chili powder
  • 1 tbsp paprika
  • 1 tbsp cumin
  • 1/4 tsp cayenne pepper
  • 1/4 cup vegetable oil
  • 1 1/2 cup water
  • salt
  • pepper

Add 2 tbsp oil to large pot and brown beef 4 min on medium-high heat. Set beef aside.

Add 2 tbsp oil and chopped onions and cook til golden on medium-high heat 10 min.

Add diced jalepeño and cook 5 min.

Add minced garlic and cook 30 sec.

Add chili powder, paprika, cumin, cayenne, and tomato sauce and cook 1 min.

Add water, stewed tomatoes (consider dicing the tomatoes), and beef and bring to
boil. Reduce heat and simmer partially covered 30 min.

Add beans with liquid and simmer uncovered 30 min.

Add salt and pepper to taste.
